It's difficult to see how they steer them. I would have thought that you would have needed two reins per bike, unless the "yoke" bit at the front prevents the handlebars from turning. Maybe there is some special linkage which does it.
Anyway, you are right. Far more exciting than idiotic-looking blokes sliding things across ice and then running about with brooms.

Sam - there does seem to be a special linkage to make the handlebars turn together. As for those brooms, it just doesn't look very sporting.
